It's that time of year again; the days are shorter, the nights cooler, there's a crisp feeling in the air, and at our house pumpkin cookies are in the oven. Autumn is one of my favorite times of year and you just can't have autumn without pumpkins! Doesn't the scent of a lit pumpkin candle or the sight of brightly colored mums on the front porch or putting the squishy comforter back on your bed just make you feel all warm and happy inside?!
I thought I would share my favorite recipe for pumpkin cookies just in case any of you are having a little difficulty letting go of summer and needing a gentle nudge getting into the fall spirit. Special thanks to my beautiful sister-in-law, Kristi, who shared this recipe with me a few years ago!
Pumpkin Cookies
1/2 cup Crisco
1/2 cup butter
1 cup sugar
1 cup plain pumpkin
1 egg
1/2 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Combine wet ingredients in a bowl, add dry ingredients. Bake at 350 for 8-10 minutes.
Cream Cheese Frosting
4 oz cream cheese
2 tablespoons butter
1/2 teaspoon vanilla
1-2 cups powdered sugar
Cream together cream cheese and butter then add vanilla and powdered sugar. Beat until creamy, add milk if needed to desired consistency, keep thick.
